Cheers to the weekend

Blustery breezes, maybe a little rain and lovely warming sunshine. The kind of days that make you want to sit on your porch and guzzle cool tropical drinks with good friends! Great entertaining hinges not only on great food  but great drinks as well. Its easy to pick up prepackaged drinks at your nearest grocery store, but I’ll tell you, its exquisite if you can blend your own tropical delights at home. All you need is a blender, lots of ice, fresh fruit and good quality fruit juices. Delicious drinks need not always contain alcohol. So this weekend go ahead, blend something tropical and enjoy! Cheers!
 
PASSION PUNCH
1 14 oz tin good quality pineapple juice
1 large ripe banana
1 mango, peeled and flesh removed or 1 cup        paw paw
2 ozs passion fruit juice
2 tbs sugar
Juice of  two limes
Ice to blend     
Place all the ingredients into a blender with about one cup of ice. Blend until thick and frothy. Pour over more crushed ice, garnish with pineapple pieces and maraschino cherries. Serves 2 to 3
 
BEST TRINI RUM PUNCH
1 cup fresh lime juice
2 cups sugar syrup
4 cups water
3 cups dark rum
A dash of Angostura Bitters
Grating of fresh nutmeg
Maraschino cherries and lime slices for garnish.
Make a simple syrup with sugar and water by combining the two and bringing the mixture to a boil. You should have about five to six cups of syrup. Cool.
Combine the rum, lime juice and syrup.
Pour over lots of crushed ice placed in tall slim glasses, sprinkle with nutmeg and bitters. Garnish with cherries and lime slices. Serves ten
 
LIME COOLER
Juice of four limes
1/2 cup sugar syrup
4 cups crushed ice
Lime slices for garnish
A dash of bitters.
Place all ingredients in a blender and blend until slushy.
Pour into tall slim glasses, garnish with lime slices and add bitters.
 
POWER PUNCH
1 banana (or 1 cup any preferred fruit)
1/2 cup fresh pineapple
1/2 cup low fat yogurt
1 tsp. honey
1 tbsp.  wheat germ
1/2 tsp. vanilla essence
In a blender process all the ingredients until smooth. Pour over crushed ice and serve.

ORANGE PASSION TEA DELIGHT
1 cup fresh pineapple chunks
1 banana
2 flavoured tea bags, (Orange, passionfruit and jasmine flavoured)
1 cup boiling water
1 tbs passion fruit pulp
2 tsp brown sugar
A dash  of  aromatic bitters
Pour boiling water tea bags in a glass jug and let steep for five minutes. Remove bags and refrigerate.
In a blender, puree pineapple with banana, sugar, and passion fruit pulp.
Add tea and ice. Process until frothy and ice is chopped. Pour into tall glasses. Serves two
 
RUM CHILLER
4 ozs pineapple juice
2 ozs dark rum
11/2 tsp banana liqueur
1 tsp lime juice
Place ingredients together with one cup crushed ice into a blender and blend until smooth.
Pour into chilled stemmed glasses and serve. Serves 2
 
ICE CREAM SODA
8 scoops vanilla ice cream
2 cups crushed ice
2 cups Seven Up or Sprite soft drink
Place four scoops of ice cream and other ingredients into a blender and blend until thick and slushy.
Pour into tall glasses and add two additional scoops of ice cream per glass. Serve with straws and tall spoons. Serves two
